The festive season brings out the baker in all of us. It’s the family get-togethers, the warm nostalgia of an annual reunion of far-flung family members, the sharing, the air of positivity, the reflection on the year that was and the promise of the year that will be.

With the festive season comes an influx of mouths to feed. With that in mind, here are three inventive festive season baking ideas that are sure to delight you and yours this Christmas.

Danish pastry mince pies

Fruit mince pies have been a popular Christmas tradition for Australian families for decades. Indeed, mince pies are synonymous with Christmas in much of the English-speaking world and the history of the mince pie dates back to the 13th Century.

To put a modern twist on your fruit mince pies this festive season, try shaping them as Danish pastries with a custard almond base and dusted with icing sugar. Along with our Large Square Pastry Shells, you’ll need:

  • 150g of custard
  • 50g of ground almonds
  • ¼ tsp almond extract
  • 160g mince meat
  • One egg yolk
  • 25g flaked almonds
  • icing sugar

Canadian Christmas butter tarts

Considered one of Canada’s quintessential Christmas treats, the Canadian Christmas butter tart is a sweet pastry delicacy filled with butter, sugar, syrup, and egg. Once baked, the filling is mouth-wateringly semi-solid with a crunchy top.

Exact recipes for the Canadian Christmas butter tart vary across the different regions of Canada, with some of the more progressive variants including everything from raisins, walnuts and pecans to bacon, pumpkin, chili and salted caramel.

  • Two large eggs
  • 85g brown sugar
  • 75g raisins or sultanas
  • 1 teaspoon vanilla extract or essence
  • 55g butter, room temperature
  • 250ml golden syrup

Christmas pudding custard pastry braid

Regardless of how many extended family members and friends you invite to your Christmas soiree, it’s all but guaranteed that come Boxing Day and beyond you’ll be left with a fridge and freezer full of left overs. There’s nothing worse than letting good food go to waste, so why not take that leftover Christmas pudding and put it towards a custard pastry braid?

  • 1 tbsp caster sugar
  • 1 tbsp water
  • 1 tbsp dried cranberries (or other dried fruits)
  • 1 tbsp pistachios (or other nuts)
